Plan on 1 cu ft for every 30-35 lb of packaged beef. A quarter fits a standard 7-cu ft chest freezer with room to spare.
What’s the difference between hanging and packed weight?
Hanging weight is the carcass after harvest but before trimming. You take home about 60-65 % of that as lean, ready-to-cook cuts.
Do I have to take organ meat and bones?
No. Check the boxes on your cut sheet.
Is the beef dry-aged?
Yes, 10-14 days for balanced tenderness and flavor without excessive shrinkage.

Deposits are non-refundable once the butcher date is set, but transferable to a later harvest if life changes.
